Flaugnarde (also flagnarde or flognarde) is a simple, baked French dessert with fruit arranged in a buttered dish and covered with batter. The ready flaugnarde resembles a sweet pudding or a large pancake. It is similar to clafoutis, which is made with black cherries, but this warm custard is made with other fruits.
Flagnarde can be served either cold or warm. You can try to cut it in pieces to serve or eat with a spoon from the dish.

Ingredients
- 300 g (2 cups) fresh strawberries
- 1 tbsp unsalted butter
- 130 g (2/3 cup) sugar
- 310 ml 2% or whole fat milk
- 3 eggs (room temperature)
- 60 g (1/2 cup) all-purpose flour
- 1 tsp vanilla
- a pinch of salt
Equipment
- A baking dish, which fits at least 1.2 litres (40.6 oz).
Directions
- Set the oven to heat to 180° C or 400° F.
- Grease the baking dish generously with 1 tbsp of butter.
- Coat the bottom and sides of the baking dish with about 2 tbsp of sugar.
- Hull and cut in half the strawberries and put them in the baking dish in one layer.
- Break 3 eggs in a bowl and whisk them a little.
- Gradually add to the eggs the sugar, vanilla, a pinch of salt and a part of milk.
- Sift and mix in the flour.
- Add the remaining milk.
- Pour the batter int he baking dish over the strawberries and put in the oven to bake for 1 hour.
- Flaugnarde should be ready when it’s puffed and browned around the edges. The middle should still be a little wiggly.
- Remove from the oven and enjoy!
Notes
- If the flaugnarde does not look cooked yet, but the sides start to brown too much, cover it loosely with aluminium foil.
- For best results, measure ingredients with a scale. All recipes are made with weighed ingredients using grams. Cup measurements are provided for your convenience.
