Delicious and easy cottage cheese pancake recipe

To make delicious cottage cheese pancakes, also known as syrniki, we need a few simple ingredients: creamy, homemade cottage cheese, egg, sugar and all-purpose flour, with optional additions of baking powder for puffiness and a teaspoon of vanilla for a warm, aromatic touch.

Ingredients

  • 250 g / 0.55 lbs cottage cheese
  • 1 egg
  • 50 g / 3 tbsp granulated sugar
  • 50 g / 2.5 tbsp all-purpose flour
  • 1/2 tsp baking powder (optional)
  • 1 tsp vanilla (optional)
  • cooking oil (about 1.5 tbsp)

Directions

  1. Put the cottage cheese, vanilla, egg and sugar in a bowl. Mix everything well, making sure there are no cottage cheese lumps in the mixture.
  2. If you want the pancakes to be fluffier, add half a teaspoon of baking powder. The pancakes will be fine and tasty also if you skip the baking powder.
  3. Add and mix in the flour. You only need the flour to make the batter a bit thicker, so that it holds together and pancakes can be shaped. I add about 2 and a half tablespoons of flour as the cottage cheese I use is quite dry. Too much flour will make the pancakes dense. If you use cottage cheese, which has more liquid, like the store bought ones from a container with some milk or cream added, you will need to add more flour.
  4. Heat up a frying pan with about a tablespoon of cooking oil. I use sunflower oil for more neutral flavour.
  5. Wet your hands with a bit of water to be able to shape the pancakes easier as the batter otherwise will stick to your hands. Take about a tablespoon of the pancake batter and shape small patties.
  6. Put a lid on the pan and fry the pancakes on medium heat for a few minutes on one side so that they cook through and puff. After a few minutes, flip the pancakes and let the other side fry for a few minutes as well, till they are nicely brown. Add a bit more oil in the pan if the pancakes start to stick to the pan.
  7. When the pancakes are ready, remove them from the pan and put on a plate covered with a few sheets of paper towel or a napkin so that it soaks up some of the cooking oil from the pancakes and they are not greasy.
  8. And enjoy your cottage cheese pancakes on their own, with some jam, sour cream or honey!

NOTES

  • Adjust the amount of sugar to your taste. I use freshly made cottage cheese with very mild flavour. If you use more sour cottage cheese, you might want to add a bit more sugar to balance the sourness.
