Combined with cottage cheese and carrot, semolina makes a delicious, healthy and simple baked dessert, which can be eaten both – hot and cold, and tastes nice on its own, with some berry sauce or whipped cream.
Ingredients
- 1 medium carrot (about 70 g ); peeled and washed
- 125 ml / 0.5 cups milk + 25 ml / 2 tbsp water
- 25 g / 2 tbsp semolina
- 25 g / 2 tbsp granulated sugar
- 125 g / 0.5 cups cottage cheese
- 1 egg (room temperature)
- Spices: 1/2 tsp cinnamon; 1/8 tsp ground nutmeg, a pinch of salt
- 1 tsp butter or oil and 2 tsp sugar for preparing the ramekins

- 2 ramekins 240 ml / 8 oz (You can also use a small cake pan instead)
Directions
- Grate a carrot on the fine grating side of a grater.
- Pour milk and water in a small pot and heat on the stove on medium heat. When the milk has warmed, add sugar and the grated carrot. Stir and let it slowly cook till the carrot is soft.
- Grease the ramekins with butter or oil and sprinkle with a teaspoon of granulated sugar, covering the bottom and sides.
- When the carrot is soft, gradually add semolina in the pot while continuously stirring so that it does not form lumps. Cook for a minute or so till the semolina thickens. Remove the pot from the stove and let the carrot / semolina porridge cool for a few minutes.
- Set the oven to heat to 180° C or 400° F.
- Add the spices (cinnamon, nutmeg and salt) to the porridge and the cottage cheese. Mix everything well.
- Separate the egg yolk from the egg white. Add the egg yolk to the rest of the mixture and the egg white separate. Mix in the egg yolk.
- Beat the egg white with an electric mixer or by hand till it forms stiff peaks. Gradually fold the egg white in the rest of the batter.
- Put the batter in the ramekins and shake them a little to level the batter.
- Bake the desserts for about 30 min till the tops start to lightly brown and sides separate from the ramekins. To check, insert a toothpick in the middle. If the toothpick comes out dry, the dessert is ready.
- After removing from the oven, let the desserts cool for a few minutes. Run a knife around the edges of a ramekin and flip each dessert on a plate. And enjoy!
