Hot ham and cheese breakfast sandwiches

These hot breakfast ham and cheese sandwiches are quick to assemble and require 15 minutes in the oven. To make the sandwiches, you can use the ingredients you like – your preferred type of bread and cheese, as well as choose what to put between the bread and cheese for a variety of flavours. The sandwiches are also delicious with only cheese/egg mix on top of them.

Ingredients

  • 6 slices of wholegrain bread
  • appr. 30 g (2 tbsp) butter
  • 1 medium size tomato
  • 5 small pickles
  • appr. 80 g (0.6 cup) smoked turkey slices
  • appr. 200 g (1 cup) shredded cheese like Cheddar, Gouda, Mozzarella, etc.
  • 2 eggs
  • salt and pepper

Directions

  1. Set the oven to heat to 180° C or 400° F and insert parchment paper or a silicone baking mat in a baking tray.
  2. Spread butter on top of each bread slice.
  3. Cut tomato, pickles and smoked turkey slices into small pieces.
  4. Mix in a small bowl the shredded cheese and eggs. Add some black pepper and salt.
  5. Put some turkey on each slice of bread, distributing equally among the bread slices. Then tomatoes and pickles. On top put the egg/cheese mix. If you want, spread a teaspoon of mayonnaise under the egg/cheese mix.
  6. Bake the sandwiches for about 15 minutes till the bread is toasted and cheese has melted.
