One of the most delicious ways to have apples is definitely apples in a cake. So if you have a few apples, why not use them to bake a simple and homemade cake with a lot of apple pieces inside?
Equipment
- I use a springform cake pan 23×6 cm (9×2.5 inches)
Ingredients
- 2-3 medium size apples.
- 120 g (1 cup) all-purpose flour
- 5 g (1.3 tsp) baking powder
- 2 eggs (room temperature)
- 100 g (1/2 cup) brown sugar
- 120 g (1/2 cup) unsalted butter (room temperature)
- 1/2 tsp vanilla
- 3 tablespoons amaretto (optional)
- a pinch of salt
Directions
- Set the oven to heat to 180° C or 400° C.
- Insert parchment paper in the bottom of the cake pan and grease the pan with soft butter or oil.
- Peel, core and cut apples in small pieces.
- Mix in a bowl flour and the baking powder.
- Separate egg yolks from egg whites in two different bowls.
- Add sugar to the egg yolks and beat till the egg/sugar mix is light and fluffy.
- Add butter and continue mixing till it’s well integrated.
- Mix in vanilla and amaretto.
- Sift in the flour and the baking powder. Mix with a wooden spoon or a rubber spatula to combine everything so that the batter is smooth.
- Add apples and fold in the batter.
- Add a pinch of salt to the egg whites and beat the egg whites with a clean and dry whisk till they are stiff. Gradually fold the egg whites in the batter.
- Pour the batter in the prepared cake pan and bake for about 30 to 40 minutes. Check the cake by inserting a toothpick in the middle. If the toothpick comes out clean and dry, the cake is ready. Otherwise bake the cake a little more and check again.
- Remove the cake from the oven and let it cool for a few minutes. Then run a blunt knife around the edges of the cake and remove it from the cake pan.
- Sprinkle the cake with some powdered sugar or decorate as you wish and enjoy!
