Apple puff pastry tarts

The small apple and puff pastry mini tarts are great when you want something simple and quick for a dessert.

Ingredients

  • 260 g / 9 oz puff pastry (I use without butter, but any is fine)
  • 80 g / 2.8 oz cottage cheese or ricotta
  • 1 medium size apple
  • 1 egg
  • 6 tsp sugar
  • 1 tsp cinnamon

Directions

  1. Set the oven to heat to 180° Celsius or 400° Fahrenheit.
  2. Insert parchment paper or a silicone baking mat in a baking tray and grease it with a bit of cooking oil.
  3. Unroll and flatten the puff pastry sheet. I usually take it out of the fridge a little while before baking so that it softens at room temperature and does not break when being unrolled.
  4. Cut the puff pastry sheet in square pieces and put the pieces on the baking tray leaving a little gap between them.
  5. Break an egg in a glass and whisk it a little.
  6. Spread a little bit of egg on each puff pastry square using a pastry brush.
  7. Mix the cottage cheese with the remaining egg. Add to the cottage cheese also about two thirds of sugar, leaving a little bit for later to spread over the apples. Mix in also the cinnamon.
  8. Wash and cut the apple in four parts and remove the core. If you prefer, you can peel the apple. Cut the apple pieces into thin (narrow) slices.
  9. Put about a teaspoon or two of the cottage cheese mix on each puff pastry square and arrange apple slices on top. Leave the sides of each puff pastry square free as they will puff up when baking.
  10. Sprinkle a little bit of sugar on each mini tart. And a little bit of cinnamon if you wish.
  11. Bake the tarts for about 10 – 15 minutes till the sides have puffed up and slightly browned.
  12. Remove the baking tray from the oven, let the mini tarts cool a little and enjoy!
