The rich and delicious chocolate flan is easy and quick to make. The longest in the process is waiting for the flan to cool and set, so it’s best to make it the day before you want to eat it.
The chocolate flan is made without flour. I cook it in flan pot in a water bath on the stove, but it can also be baked in a deeper dish in a water bath in the oven.
Ingredients
- 1 can (14 oz) condensed sweetened milk
- 120 ml (1/2 cup) whole fat milk
- 60 g (1/2 cup) unsweetened cocoa powder
- 50 g (1/4 cup) sugar
- 4 g (1/4 tbsp) cornstarch
- 2 eggs (room temperature)
- 1/2 tsp vanilla
Equipment
- A flan pot with a lid or a deeper dish suitable for cooking in water bath.
- A big pot in which the flan pot fits inside.
- Ideally a heat resistant pot holder to put underneath the flan pot in the big pot.
Directions
- Put a big pot on the stove, fill it with water up to approximately 1/3 of the flan pot and put it to heat.
- Grease the flan pot with oil or butter.
- Mix all the ingredients in a blender: the eggs, sugar, cornstarch, vanilla, cocoa powder, condensed milk and milk. Stop the blender and scrape the sides of it to make sure everything blends in the batter. Blend till the batter is smooth and consistent.
- Pour the batter in the prepared flan pot, close the lid and put the flan pot in the big pot on the stove. The flan pot should not be moving inside the pot, therefore if the cooking pot is much bigger, it’s best to put something heavy on top of the flan pot to prevent it from moving. I have used a rock from the garden before.
- Add water so that it is approximately up to a half of the flan pot.
- Close the lid of the pot and increase the stove temperature to heat up the water faster. Once it’s boiling, reduce the stove temperature to medium low so that the water keeps heating, but does not splash.
- Cook the flan on medium low for about 45 – 50 minutes. It should be a bit bubbly, foamy, but still a little wiggly when removed from the water bath.
- Remove it from the cooking pot and leave to cool in room temperature. It will take a few hours.
- When the flan has cooled, run a knife around the edges of the flan pot, put the lid back on and put the flan in the fridge overnight to set fully.
- Next day run a knife around the edges of the flan pot again and remove the flan from the pot by putting a plate on top of the pot and flipping it over.
- Decorate as you wish and enjoy!
Notes
- In case, for whatever reason the flan is stuck to the bottom of the pot, I put a little bit, a few cm of boiling water in a small bowl and put the flan pot inside for a minute. The hot water melts the flan on the bottom of the pot and it comes out easily.
- For best results, measure ingredients with a scale. All recipes are made with weighed ingredients using grams. Cup measurements are provided for your convenience.
